The Next Level of Wedding Food: Molecular Gastronomy!

BY The WMG Bride | 10 Sep, 2014 | 4010 views | 5 min read

A menu for your wedding that's just out of this world?  Try Molecular Gastronomy! Yea yea, we know what you're thinking. Why are such high-funda scientific words featuring on a wedding website? Hold on to your horses, we will tell you why exactly this is big, and such an amazing concept for weddings. We'll shut up for a bit and just let you see for yourselves.... molecular-gastronomy If you're an Indian, you must know that food is that one thing that aunty-uncles remember even years after the wedding is over! Not like people have high hopes of getting awesome food going into one, but still, saying that the food was good or bad is such a desi thing to do! Wedding food... what's the first thing that comes to mind? A chaat counter, or maybe chole bhature? Sounds super ghisa-pita no? Imagine going to a wedding where everything looks like it's come from some other place. No, we aren't talking of international, we mean out of the world! Food that looks like it doesn't belong to the planet! Extremely new to the Indian crowd, molecular gastronomy is something that's really catching on with our videshi people! It's all about cooking with a pinch of science to it! Food that will be liked by both, your mouth and your eyes! There's use of carbon dioxide, liquid nitrogen as well as other hi-fi chemicals, which are used to cook, freeze, melt and boil things. molecular gastronomy weddings-001 Mishti Doi Lollipop (left)  and Paan Flavored Cotton Candy (Right) : Ever enjoyed Candy Floss as a little kid, well you can have Pan flavoured candy as dessert after your dinner is served. If Lollipop is your candy crush, then Mishti Doi Lollipop will be the perfect palate cleanser. Both of these are  available at the amazing Masala Library restaurant in Mumbai opened by Jiggs Kalra's son- Zoravar cocktail sphere xbreaking-cocktail-sphere.jpg,q79f2b8.pagespeed.ic.RJCZUyyaJO Cocktails in ice spheres: Who needs liquid cocktails when you can have Mojitos and martinis frozen inside ice spheres. You break down the ice , the cocktail slips out into the glass and the ice helps the drink stay cooler for a longer time molecular gastronomy   Transparent Ravioli and Pasta: Looks a wee bit ick to us, but hey takes 'knowing what you are eating' to a whole new level   molecular gastronomy weddings-002 Duck in a Cornetto, Aloo Chatt puure with parantha and Pomegranate Kulfi: All of these are examples of Molecular gastronomy at the restaurant Indian Accent in The Manor, New Delhi. FYI- they do wedding catering as well and are a unit of Old world hospitality who is on our Handbook for their affordable catering division- Events Etc canape 2 See through Canapes: Crunch through your favourite taco , only difference is it would be transparent ! So cool! molecular-gastronomy-001   Left: Parle G Cheesecake and right: Pan inside cotton candy : Both of these spectacular dishes are available at the newly opened and totally awesome Farzi Cafe in Delhi, which by the way is also run by Zoravar Kalra who seems to be making it his mission to bring new age indian food to the masses. If you're thinking whether it's safe to eat or not, don't fret! These are all chemicals derived from natural sources. Your local chaatwala might just be adding more dangerous chemicals than this! This concept has really caught on abroad, especially in Europe with even fancy chefs with Michelin stars exploring the zone. As far as India is concerned, it's still a very nascent concept. If you're interested in grabbing eyeballs with this for your wedding, you can explore your options. If you can afford to fly down an international chef well and good, otherwise there are certain restaurants in Bangalore, Mumbai and Delhi that offer this awesome-looking food, especially desserts and cocktails. Since the ingredients don't come cheap, this will most likely cost a bomb if you want to cater to a huge crowd... but remember, this is something that people will remember your wedding by for a long long time to come! After all, aisa khana aur kahan milega?   Restaurants experimenting with Molecular Gastronomy in India:
  • Masala Library, Mumbai
  • Caperberry, Bangalore
  • Farzi Cafe, New Delhi
  • Indian Accent, New Delhi
Incorporate this into your wedding menu:
  • While having an entire menu dedicated to Molecular gastronomy might become too hatke for the average Indian wedding guest, one cool thing would be to have one station devoted to Live chefs cooking up these delights.
  • When it comes to the bar, you could definitely have one signature cocktail call it the "Malhotra Special" or whatever your surname is and have that in this cool ice sphere concept
  • To add to the guests delight, you could put smaller items like the Farzi Cafe Pan or lollipops on the guests table already for them to take a bite !
  • Having these concepts on your wedding day might become too unmanageable with a huge guest list, so have a 'brunch day' with 50-70 of your closest friends and family and call chefs from the above restaurants to cater the food. Make it international style with name tags, seating and menus!
